In 1991, Josef Sauerschell, as chef at the Belmond La Residencia in Deià, received his first star. But a few years later, in 1999, the committee that annually evaluates the level of the awarded restaurants withdrew it.

It was due to many factors beyond his control, but the fact remains that this became a milestone in his career towards the next star. So he embarked on the adventure of opening, together with his wife Leonor, his own restaurant. They did so in the year 2000, a project that soon bore fruit, because in 2002 he received the coveted star.
